- 8 ounces of pasta
- 2 cups fresh corn
- 1/4 cup lime juice
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- Salt and pepper to taste
- Chili powder (optional, for garnish)
Instructions
- Cook the pasta until al dente, then drain and rinse under cold water.
- Grill or sauté the fresh corn until slightly charred.
- Whisk together the lime juice, mayonnaise, and sour cream in a large bowl.
- Fold in the cooked pasta and grilled corn along with chopped cilantro.
- Season with salt and pepper to taste.
- Chill the salad in the refrigerator before serving.
Notes
For variations, add diced avocado, black beans, or jalapeño. This pasta salad can be made gluten-free with appropriate pasta.
