Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini, squeezing out excess moisture.
- In one bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, mix the wet ingredients: sugar, oil (or applesauce), and eggs until smooth.
- Gradually stir the wet mixture into the dry, mixing until just combined.
- Fold in the grated zucchini gently.
- Pour the batter into a prepared loaf pan.
- Bake for 50 to 60 minutes until golden brown and a toothpick comes out clean.
Notes
For best results, use freshly grated zucchini. Add milk if the batter is too thick and avoid overmixing to ensure fluffy bread.
