Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil or applesauce
  • 2 large eggs
  • 2 cups grated zucchini

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini, squeezing out excess moisture.
  3. In one bowl, combine the dry ingredients: flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, mix the wet ingredients: sugar, oil (or applesauce), and eggs until smooth.
  5. Gradually stir the wet mixture into the dry, mixing until just combined.
  6. Fold in the grated zucchini gently.
  7. Pour the batter into a prepared loaf pan.
  8. Bake for 50 to 60 minutes until golden brown and a toothpick comes out clean.
