Ingredients

  • 8 oz tortellini (cheese-filled or vegetable-filled)
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, chopped
  • 2 cups fresh spinach, chopped
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup Parmesan cheese (optional)

Instructions
