Instructions
- Boil water in a large pot.
- Cook the tortellini according to package instructions until al dente, about 3-5 minutes.

- Chop the cherry tomatoes, bell pepper, and spinach.
- Mix olive oil, balsamic vinegar, salt, and pepper in a small bowl to prepare the dressing.
- Combine the cooled tortellini, vegetables, and dressing in a large bowl.
- Toss gently to blend all the flavors.
- Serve immediately or refrigerate for later.
