Spaghetti Aglio e Olio

A simple and quick spaghetti dish with garlic, olive oil, and a hint of spice, perfect for busy weeknights.

Ingredients

  • 400g spaghetti
  • 4 cloves of garlic, thinly sliced
  • 1/2 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • Salt, to taste
  • Fresh parsley, chopped
  • Grated Parmesan cheese (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large pan over medium heat.
  3. Add the sliced garlic to the pan and cook until golden brown, about 2 minutes. Be careful not to burn the garlic.
  4. Add the red pepper flakes and stir for another 30 seconds.
  5. When the pasta is done, reserve 1 cup of the pasta water and then drain the spaghetti.
  6. Add the drained spaghetti to the pan with the garlic oil. Toss everything together, adding reserved pasta water as needed to help coat the spaghetti.
  7. Season with salt and mix in the fresh parsley.
  8. Serve hot with grated Parmesan cheese if desired.

Notes

Make sure to watch the garlic closely, as it can burn quickly. If you like a stronger flavor, add more red pepper flakes.
